THE SPIRITS BUSINESS | GIN MASTERS GOLD 2017
Made of fresh botanicals (never dried) which are wild in the mountains around the distillery. Each is sustainably foraged by one person: our wild foodie, Geraldine Kavanagh. They are then placed in the still within hours of foraging. Next, they're slow-distilled to tease out delicate flavours by our obsessive stillman, Rowdy Rooney. Created in tiny batches of less than 250 litres with cut-points decided batch by batch, by smell and taste, never automatically.
The Nose: Fresh Spring notes with juniper, citrus, pine. A forest clearing in bloom.
The Taste: Cool and mellow at first, rushing to nectarous Summer flowers and hints of Autumn fruits finally giving way to warm spice.
The Finish: Long and sylvan, with warm winter spices.
